Here's a new single origin Mexican decaf!
It's not often we have a new decaf but we're very proud to offer this organic decaf from Mexico. This decaffeination process undergoes the Mountain Water Process. As explained below no chemicals are involved in this process thus retaining the beautiful characteristics of this coffee.
All the coffee is received in parchment, quality controlled and transported to a high tech drying mill in Veracruz. Its quality control standard allows for only 15 imperfections per 300 grams.
We chose to roast this to a medium roast making it suitable for both espresso and filter brew methods.

Mountain Water Decaf
Mountain Water Process is a method of removing the caffeine indirectly. This Mountain Water decaf comes from Descamex, which uses pure water from Pico de Orizaba—the highest mountain in Mexico. The process begins with an analysis to determine optimal conditions, and then the beans are steamed and prepared for extraction. The extraction process uses a water-based saturated solution that removes the caffeine while keeping the coffee's flavor compounds in place.

This coffee is from Mexico in the Chiapas region. It comes from small placeholder producers who deliver to the San Cristobal de las Casas and Yajalon buying stations in the Northern region of Chiapas. The growing area spans between the altitudes of 900 and 1,100 metres.
